Spicy Pineapple Pork

• 1 large onion• 1 red pepper• 1 clove garlic• 1 tablespoon vegetable oil• 500g minced/diced pork• 1-2 tablespoons medium curry powder• 1 teaspoon cumin seeds• 227g/8oz can pineapple chunks in natural juice• 300ml chicken stock• 2 tablespoons tomato purée• salt• Black pepper
STEP1Peel and finely slice the onion. Halve, deseed and finely slice the red pepper. Peel and crush the garlic.STEP 2Heat the oil in a large frying pan or wok. Add the onion and red pepper. Fry for 5 minutes, stirring occasionally, until just tender.STEP 3Increase heat slightly. Add the pork and garlic. Stir-fry for 4-5 minutes, or until the pork is lightly browned all over.STEP 4Add the curry powder and cumin seeds to the pork mixture. Mix well and cook for a further minute.STEP 5Add the pineapple chunks and juice, stock and tomato purée to the pan or wok. Mix well. Bring to boil, cover and simmer for 30 minutes, stirring occasionally.STEP 6Season.
