• 800g, Beef, diced into 4cm pieces.• 1 large, Brown onion, chopped.• 1 large, Carrot, chopped.• 3, Garlic cloves, crushed.• 2 sprigs, Fresh rosemary, plus extra small sprigs to serve.• 2, Bay leaves.• 1 cup, Dry red wine.• 700g bottle, Tomato passata.• 2, Beef stock cubes, crumbled.• 1 cup, Water.• 500g packet, Gnocchi.
Step 1Heat half the oil in a large saucepan over medium-high heat. Add the beef in two batches and cook for 5 minutes or until browned all over. Transfer the beef to a heatproof bowl and set aside.Step 2Heat the remaining oil in the same pan over medium heat. Add the onion, carrot, and celery, stirring for 5 minutes or until the vegetables begin to brown. Stir in the garlic, rosemary, and bay leaves, cooking for 1 minute until fragrant. Add the wine and cook for 2 minutes, reducing it by half. Then, stir in the passata, crumbled stock cubes, and water. Bring to a simmer before returning the beef to the pan. Reduce the heat to low, cover, and cook for 1 hour 30 minutes, or until the beef is tender.Step 3Add the zucchini to the pan and cook, covered, for 5 minutes or until the zucchini is nearly tender. Stir in the gnocchi and cook, covered, for another 5 minutes or until the gnocchi is tender. Serve topped with extra rosemary.
